By 1965, there was one craft brewery in the entire United States: Anchor Brewery in San Francisco. The reach of its beers, though, did not extend beyond California. It would have no company, either, for years—a veritable culinary freak show in an increasingly homogenized American food landscape. Then, within thirty years, the number of American craft breweries increased more than 500 percent.
